APPLESAUCE SNACK CUPS
1 (4 serving size) pkg. Jello Brand sugar-free gelatin, any
red flavor
1 c. boiling water
3/4 c. cold unsweetened applesauce
1/4 tsp. ground cinnamon
1/2 c. vanilla lowfat yogurt
Completely dissolve gelatin in boiling water. Measure 3/4
cup gelatin; combine with applesauce and cinnamon. Pour into
4 individual dishes or medium serving bowl. Chill until set
but not firm. Chill remaining gelatin until slightly
thickened. Stir in yogurt until well blended; spoon over
gelatin dishes. Chill until set, about 2 hours. Makes 2 cups
or 4 servings
BING CHERRY JELLO MOLD
1 sm. pkg. lemon Jello
2 sm. pkg. black cherry Jello
8 oz. container sour cream
1 lb. can pitted black cherries
Dissolve lemon Jello
in 1 cup boiling water. Let cool. Add sour cream, blend
well, pour into mold. Dissolve black cherry Jello in 2 cups
boiling water. Let cool. Drain (save enough juice to make 1
1/2 cups liquid mixed with water). Add liquid to Jello and
blend.
Let cool. Put cherries
on top of lemon mixture. Then add liquid over cherries.
Refrigerate until set.
APRICOT CAKE
1 pkg. yellow cake mix
1 box orange Jello
1 c. apricot nectar
3/4 c. Wesson oil
4 eggs, 1 at a time
Mix well. Pour into a slightly greased tube pan and bake at
350 degrees for 1 hour. Glaze while warm.
GLAZE
One to 2 cups powdered sugar mixed with enough nectar to
spreading consistency.
LEMONADE CAKE
1 box Duncan Hines yellow cake mix
1 sm. box lemon Jello
3/4 c. boiling water
4 eggs
3/4 c. Crisco oil
1 sm. can frozen lemonade
1/2 c. sugar
Mix Jello and boiling water until dissolved. Let cool. In
large bowl mix cake mix, eggs, oil and Jello mixture. Mix
with a spoon, not a mixer. Spray bundt pan with Baker's Joy.
Spoon in cake mixture. Bake at 325 degrees for 1 hour,
without opening oven door. In a small bowl mix frozen
lemonade and sugar together. Then pour or spoon over cake as
soon as it comes out of the oven. Then allow to cool before
cutting.
