A lifetime collection of simple and easy to prepare recipes from Annie's Recipe Kitchen. These are recipes that I have collected over the years  and put into a shoebox to organize at a later time.  This is my attempt to organize them.

These crock pot recipes that have been collected over the years. They are ones that were in shoe boxes and other assorted boxes that I have collected over the years. This is my attempt to organize them. 


Old Fashioned Baked Beans
1 small package navy beans
4 tbsp. granulated sugar
2 scant tsp. salt
1/4 tsp. black pepper
1 tsp. powdered mustard
1/2 c. molasses
1 (2 to 3 oz.) piece salt pork
1 med. peeled whole onion

Soak beans overnight. In a.m. drain and replace water. Parboil 10 to 15 minutes (not longer). Place onion in crock pot. Drain beans and put on top of onion. Add flavors dissolved in 1 1/2 cups of hot water. Add enough hot water to just cover top of beans. Place salt pork on top. Cover and set crock pot on high. Bring volume of water up about every 3 hours.  Cook 6-7 hours.


CHICKEN ENCHILADAS
1 whole chicken, cooked, skinned, deboned
and cut into bite size pieces
1 can cream of celery soup
1 c. sour cream
3 oz. pkg. cream cheese, softened
1/3 c. green chiles, chopped
1/3 c. jalapenos, chopped (if desired)
Dash of nutmeg
6 to 8 thick flour tortillas
1 (10 oz.) can green chile sauce
Monterey Jack cheese, shredded
Dash of chili powder

Mix together soup, sour cream, cream cheese, dash of nutmeg, dash of chili powder, green chiles and jalapenos. Add chicken and toss.

Spread filling on tortillas and roll up. Place in lightly greased rectangular baking dish, side by side. Cover with green chile sauce and top with shredded cheese. Cover with tin foil and bake at 350 degrees for approximately 45 minutes until hot and bubbly.


CROCKPOT SQUASH AND PORK CHOPS
6 thick pork chops
2 medium acorn squash
3/4 teaspoon salt
2 tablespoons margarine, melted
3/4 cup brown sugar
3/4 teaspoon Kitchen Bouquet or browning sauce
1 tablespoon orange juice
1/2 teaspoon orange peel, grated

Trim excess fat from pork chops. Cut each squash into 4 or 5 crossways slices; remove seeds. Arrange 3 chops on bottom of crockpot. Place all squash slices on top; then another layer of three remaining chops. Combine salt, butter, sugar, bouquet sauce, orange juice and orange peel. Spoon over chops. Cover and cook on low 6-8 hours or until done. Serve one or two slices of squash with each pork chop

Three Bean Casserole (Baked Bean)


BAKED BEANS
1/2 lb. bacon, diced
1/4 c. cornstarch
1/2 c. molasses
4 (16 oz.) cans pork & beans
1 med. onion, chopped
1/2 c. firmly packed brown sugar
1 tsp. dry mustard
1 tbsp. vinegar

In medium skillet, fry bacon until crisp. Drain. In crock pot, combine bacon and remaining ingredients. Stir until well mixed. Cover crock pot and cook on low setting for 6 to 8 hours.

CHICKEN SPAGHETTI
1-1/2 lb. cooked chicken, deboned
1 sm. jar of pimientos
1 lb. spaghetti
1 to 2 can of golden mushroom soup
1/2 c. American cheese
1/2 c. Mozzarella cheese

Cook spaghetti according to package directions. Place the cooked spaghetti in the bottom of a 13x9x2 inch pan. Cut chicken into bite size pieces and place them on top of the spaghetti. Now add the pimientos on top of the chicken. Spread the Campbell's golden mushroom soup onto the chicken and spaghetti mixture. Sprinkle both cheeses on top. Cook at 450 degrees for about 40 minutes or until the cheese on top melts.

HAM AND SCALLOPED POTATOES
6 to 8 slices of ham
8 to 10 med. potatoes, peeled and thinly sliced
2 onions, peeled and thinly sliced
1 c. grated Cheddar or American cheese
1 can cream of celery or mushroom soup

Put half of ham, potatoes and onions in crock pot. Sprinkle with salt and pepper, then grated cheese. Repeat with remaining half.  Spoon undiluted soup over top. Cover and cook on low 8 to 10 hours in crock pot or high 4 hours. Variations: sausage instead of ham and omit the cheese.

Crockpot Rice, Noodles, Spaghetti and other Pasta Recipes

RIBS AND RICE
2 lbs. lean spare ribs
1 can condensed beef bouillon
1/2 c. water
2 tbsp. maple syrup
2 tbsp. honey
3 tbsp. soy sauce
2 tbsp. barbecue sauce
1/2 tsp. dry mustard

Bake ribs at 350 degrees for 1 hour (1/2 hour per side) or broil for 15 to 20 minutes to remove fat. Cut into single servings.  Combine ingredients in crock pot, stir to mix. Add ribs. Cover and cook overnight or on low for 8 hours. Serve over rice.

HOT MULLED CIDER
1/2 c. brown sugar
1 tsp. whole allspice
1 tsp. whole cloves
1/4 tsp. salt
Dash of ground nutmeg
3 inches stick cinnamon
2 qt. apple juice
Orange slices

Mix all ingredients together. Heat and serve in crockpot.

Brownie Pudding Cake
1/2 cup brown sugar
3/4 cup water
2 Tablespoons cocoa
2-1/2 cups brownie mix (half of a 21.5-oz. pkg.)
1 egg
1/4 cup peanut butter
1 tablespoons soft margarine
1/4 cup water
1/4 to 1/2 cup milk chocolate chips
1/4 to 1/2 cup chopped walnuts

Combine 3/4 cup water, brown sugar and cocoa in a saucepan. Bring to a boil. In the meantime, combine the remaining ingredients in a small bowl. Whisk together or mix well with a spoon. Spread the batter evenly in the bottom of a lightly buttered slow cooker. Pour boiling mixture over the batter. Cover and cook on High for 2 hours; turn heat off and let stand for another 30 minutes. Spoon into dessert dishes while warm. Serve with whipped cream or ice cream.

GRANNY BREAD
2/3 c. oil
1 tsp. salt
3/4 c. sugar
1 c. All-Bran
7-8 c. flour

Dissolve 2 packages dry yeast in 3 cups warm water. (Set aside).  Mix all ingredients together. Butter a large bowl or crock pot; turn oven light on to warm. Knead dough thoroughly. Put in warm place. Let rise 1 hour or until doubled in size. Punch and knead gently and shape into 3 loaves. Place in bread pans and let rise again until doubled. Bake at 350 degrees for 25 minutes. Butter tops and bake 15 minutes more.

BARBEQUED HOT DOGS
Pkg. cocktail hot dogs
1/4 c. mustard
3/4 c. grape jelly

Place mustard and grape jelly into crock pot. Place on high. Put hot dogs in and simmer. Great sauce for sweet and sour meatballs, too.
