Annie's Simple and Easy Salsa Recipes
Salsa Fresca
Tomatoes will peel easily if immersed in boiling water for
30 seconds, then dipped in cold water. 4 sm. tomatoes, peeled, chopped (1 lb.)
1/2 c. finely chopped onion
1 jalapeno chile, seeded, finely
chopped
2 tsp. olive oil
1 tsp. vinegar
1 tsp. lime juice
1/2 tsp. dried leaf oregano, crushed
1/2 tsp. salt
In a medium bowl combine tomatoes, onion and chile. Add olive oil, vinegar, lime juice,
oregano and salt. Mix well. Let stand 2 hours to blend flavors. Serve at room temperature.
Makes 2 cups.
